My New Favorite Lunch

I was reading one of my old Mary Engelbreit Home Companions (a void was left in my life when this magazine folded) the other night before bed and I came across this recipe (well this is my version): 1-Butter one side of a slice of white bread and spread pesto on the other. Place the bread in a warm skillet butter side down. 2-Top the pesto with a slice of sharp cheddar cheese. 3-Next, put on a couple slices of tomato and top them off with another slice of cheddar. 4-Finally, add another slice of bread on top, buttered on the top side. Flip it once until it is golden brown on one side and let it brown on the other side (just like a grilled cheese) It is so yummy and so simple. You really should try it.

Yummy

My culinary genius husband made grouper tacos tonight. He grilled fresh grouper and served it in tortillas. Then he topped the tacos with grated cheddar cheese, shredded cabbage, sour cream and homemade mango and red salsas. Yummy! For dessert I, the culinary challenged, made a frozen peanut butter pie. It's a favorite around here. Here is the recipe:
FROZEN PEANUT BUTTER PIE 2 (3 oz.) pkgs. of cream cheese (softened)
1 c. sifted powdered sugar
1/2 c. peanut butter
1/2 c. milk
1 (9 oz.) container whipped topping (thawed)
8 inch graham cracker pie shell (I use the chocolate ones)
1/4 c. chopped nuts
In a small mixing bowl, beat cream cheese and sugar until fluffy. Add peanut butter. Beat in milk, then fold in Cool Whip. Pile into pie shell. Sprinkle with peanuts and freeze until firm.
Very simple, very delicious.
